Bone Broth Recipe - www.JuliaNicholson.com

Bones from 1 whole chicken (free range, organic if possible – see notes below) **

16 cups cold filtered water (or enough to cover the chicken and fill most of the pot)

2 Tablespoons raw apple cider vinegar

1 large onion, roughly chopped

2 carrots, peeled and roughly chopped

3 celery sticks with leaves, roughly chopped

4 cloves garlic, roughly chopped

1 teaspoon Bragg’s Amino Acids

1 bunch parsley

**I like to by a rotisserie chicken and get all the meat off (use it for my salads), then use everything that is leftover to start my broth

Place chicken bones into a large stainless steel stockpot, cover with the cold water, add vinegar, garlic, amino acids, and vegetables (except parsley), and let stand for 30 minutes.

Bring to a boil, remove scum that rises to the top, reduce heat and simmer for 8 to 24 hours. (If you are short on time, at least simmer for 3 hours). The longer you cook the stock, the richer and more flavorful it will be (you can use a crock pot as well). About 10 minutes before you’re ready to turn it off, add the parsley (this adds more minerals to the broth.)

Carefully, strain the broth into a large bowl and store in the refrigerator to use over the next couple of days, then place the extra in freezer bags and freeze it for future soups, or to drink it plain.

  1. I really like your blog! Great stuff! Where do buy your ingredients? Whole Foods? Can you recommend some bone broth that you don’t have to cook?
