Protein Pancakes

Breakfast is extremely important, but it’s also one of the busiest times in my day. Even if you don’t have kiddos and significant others to take care of, you have to get yourself ready for the day (work, workout gear, and healthy snacks/lunch).

Having some go to breakfast meals that don’t require much is vital. This is one recipe that I like to make in bulk, I’ll eat some that day and freeze the rest with wax paper in-between. That way I take them out of the freezer in the morning and put them in the toaster…presto breakfast full of protein and goodness for the day.

Protein Pancakes – Serves 2

Protein Pancakes - Healthy Sexy Life - www.JuliaNicholson.com1 scoop vanilla protein powder (some of my favorites: Dr. Axe Healing Vanilla, Vega Sport Performance, & Vegan Slim & Sassy Protein)

1/4 cup organic egg whites

1/2 banana, mashed (the riper the banana the sweeter your pancakes will be)

1 teaspoon cinnamon

1 tablespoon ground flax seed

Mix all the ingredients together in a bowl. Pour about 1/4 cup of batter into a pan that has been coated with coconut oil or sprayed with olive oil cooking spray. Heat on medium. Cook one side until you see the little bubbles, just like cooking any pancake. Flip over carefully, and cook on the other side until the middle is done. Peek inside with a fork to check the middle.

Enjoy with maple syrup (grade B for more minerals).


 

Blueberry Pancakes: Add a handful of fresh or frozen blueberries after the above ingredients are mixed together.

Optional: Top with two sliced strawberries and powdered stevia. Enjoy your protein pancakes! If you like a sweeter taste, you may add 1 tablespoon of raw honey or grade B maple syrup to the batter.
